This pecan pie skips corn syrup entirely — brown sugar, butter, and cream cooked together build the same glossy, deeply caramelized filling. The one real technique to get right is tempering: whisking the warm caramel into the eggs gradually instead of all at once, which is what keeps the filling silky instead of scrambled.

The crust is the same one used for Dutch Apple Pie and Pumpkin Pie — if you’ve made either, this part is already familiar.

What You’re Learning

Tempering the eggs is what keeps the filling silky. Whisking hot caramel straight into cold eggs shocks them into scrambling instantly — you’d end up with little curds suspended in the filling instead of a smooth custard. Whisking a portion of the warm (not hot) caramel into the eggs first, then combining the two, raises the eggs’ temperature gradually enough that they set smoothly alongside the pecans instead of curdling on contact.

Toasting the pecans first deepens their flavor well beyond what the bake alone provides. Raw pecans scattered into the filling pick up some toastiness from the oven, but a few minutes toasting them alone first, until they’re fragrant, gets them noticeably richer and less flat-tasting in the finished pie.

Ingredients

  • Crust: 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3-4 tablespoons ice water
  • Filling: 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves, toasted

Method

  1. Make the dough. In a bowl, whisk together the flour, salt, and sugar. Add the cold cubed butter and cut it in with a dough blender until the mixture looks like coarse crumbs with some pea-sized pieces remaining. Drizzle in ice water 1 tablespoon at a time, tossing with a fork, until the dough just comes together when pressed.
  2. Chill the dough. Shape the dough into a disc, wrap tightly, and refrigerate for at least 30 minutes (up to 2 days).
  3. Roll and fit the crust. On a lightly floured surface, roll the chilled dough into a 12-inch circle with a rolling pin. Transfer it to a 9-inch pie pan, press gently into the bottom and sides, then trim and crimp the overhanging edge. Refrigerate while you prepare the filling.
  4. Toast the pecans. Preheat the oven to 350°F. Spread the pecan halves on a baking sheet and toast for 6 to 8 minutes, until fragrant. Let cool slightly.
  5. Make the caramel base. In a saucepan over medium heat, melt the butter with the brown sugar, cream, and salt, stirring until the sugar dissolves and the mixture is smooth, 3 to 4 minutes. Remove from heat and let cool for 5 minutes.
  6. Temper in the eggs. In a separate bowl, whisk the eggs and vanilla. Slowly drizzle in about half of the warm caramel while whisking constantly, then whisk this mixture back into the rest of the caramel.
  7. Assemble. Scatter the toasted pecans evenly over the bottom of the chilled crust. Pour the caramel-egg filling over the top — the pecans will float and rearrange themselves, which is normal.
  8. Bake. Bake for 50 to 55 minutes, until the filling is puffed and set around the edges but still jiggles slightly in the center, like set Jell-O. Tent the edges with foil if the crust browns too quickly.
  9. Cool and serve. Let the pie cool on a wire rack for at least 2 hours — the filling firms up completely as it cools. Serve at room temperature, with a scoop of vanilla ice cream if you like.

Notes

  • Tempering the eggs — whisking in the warm caramel gradually, not all at once — is what keeps the filling silky instead of curdled. Dumping cold eggs straight into a hot pan would scramble them instantly.
  • Toasting the pecans first deepens their flavor considerably compared to raw — don’t skip it, even though the pie bakes long enough to toast them again anyway.
  • No corn syrup here. Brown sugar, butter, and cream build the same glossy caramel body. If you prefer the classic version, swap in 1 cup light corn syrup for the cream and reduce the brown sugar to 1/2 cup.
  • The center should still jiggle slightly, like set Jell-O, when the pie comes out — it firms up completely as it cools, the same doneness cue as the site’s Pumpkin Pie.
