My wife is from Spain, and a lot of what we cook at home traces straight back to her family's kitchen. This isn't the tapas-bar version of Spanish food. It's simpler than that, and it took me longer to get right.

A few ideas repeat across every recipe below: good olive oil, real heat control, and letting three or four ingredients actually taste like something. New to Spanish cooking? Start with tortilla española. It's four ingredients, and it teaches you more about heat than almost anything else here.
