No technique to master, no timing window to hit exactly, just a genuinely good side dish that happens to take about ten minutes of actual work.

The name isn’t a suggestion. This recipe is built around Jiffy corn muffin mix specifically, not a from-scratch cornbread mix or a different brand, because its particular balance of sugar and leavening is what gives this dish its signature sweet, cake-like crumb. Swap it for something else and you’ll get a different, probably drier, casserole.

Why the mix is the actual ingredient, not a shortcut. Some recipes use a boxed mix because it’s convenient. This one uses Jiffy specifically because nothing else replicates it, the sugar content is higher than most cornbread mixes, and that sweetness is exactly what balances the savory corn and tang from the sour cream. Why two forms of corn, not one. Creamed corn is what makes this casserole moist and custardy all the way through instead of turning into dry cornbread. Whole kernel corn is what gives it actual bite and the texture you can see in every spoonful. Use only creamed corn and it turns soupy and one-note. Use only whole kernel and it bakes up closer to a regular, drier cornbread. Both together is the whole point.

Ingredients

Makes one 9×13-inch casserole, about 8 servings.

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 2 large eggs, lightly beaten

Method

  1. Preheat and prep. Preheat the oven to 350°F. Grease a 9×13-inch baking dish, or a 2-quart casserole dish for a slightly taller, deeper bake.
  2. Whisk the wet ingredients. In a large mixing bowl, whisk together the sour cream, melted butter, and eggs until smooth and fully combined.
  3. Add both corns. Stir in the drained whole kernel corn and the creamed corn until evenly distributed through the wet mixture.
  4. Fold in the muffin mix. Add the Jiffy Corn Muffin Mix and fold it in just until no dry streaks remain. Stop as soon as it’s combined, overmixing develops the batter too far and the casserole bakes up denser instead of tender.
  5. Pour and bake. Pour the batter into the prepared dish and spread it into an even layer. Bake 45-50 minutes, until the top is golden brown and a knife inserted in the center comes out mostly clean. The center should still look slightly moist and custardy, not fully dry, that’s the texture this casserole is supposed to have.
  6. Rest before serving. Let it rest 10 minutes out of the oven. It firms up as it cools slightly and holds together much better when scooped.

Notes

  • A light dusting of chili powder or smoked paprika over the top right before serving adds a little color and a mild edge without changing the flavor much, a nice finishing touch if you want it to look as good as it tastes.
  • Want a cheesier version? Fold 1 cup of shredded cheddar into the batter along with the muffin mix, or scatter it over the top for the last 10 minutes of baking.
  • An 8×8 dish works too if that’s what you have, just expect a taller casserole and a longer bake, closer to 55-60 minutes. Check at 45 and go from there.
  • Leftovers keep covered in the fridge for up to 4 days. Reheat covered in a low oven until just warmed through, the microwave will dry out the edges.
