Egg salad has been a lunch counter and potluck staple in American kitchens for generations, precisely because it turns a few boiled eggs into something that punches above its ingredient list. The mistake most people make isn’t in the mayonnaise or the mustard — it’s in the eggs themselves, either undercooked and slippery or overcooked into that chalky gray-green ring around the yolk. Fix that one step and everything after it is easy.

The ice bath is not optional. Shocking the eggs in ice water the moment they come off the heat stops the cooking instantly, which is what keeps the yolks bright yellow instead of dulling into that gray-green ring. It also shrinks the egg away from the shell slightly, which is the real reason fresh-boiled eggs peel cleanly instead of tearing.

Rich food needs sharp contrast. Egg yolks and mayonnaise are both fat-forward and mild. Dijon mustard and fresh chives cut through that richness instead of just adding more of it. Once you notice this pattern here, you’ll start reaching for mustard and fresh herbs anywhere a dish tastes flat but not under-seasoned — potato salad, deviled eggs, creamy dressings.

Ingredients

  • 8 large eggs
  • ⅓ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Boil the eggs. Place the eggs in a single layer in a saucepan and cover with an inch of cold water. Bring to a boil, then cover, remove from heat, and let sit for 10–11 minutes.
  2. Shock and peel. Transfer the eggs immediately to a bowl of ice water and let them sit for at least 5 minutes. Peel under cool running water, starting at the wider end of each egg.
  3. Chop and dress. Chop the peeled eggs into rough ½-inch pieces. In a mixing bowl, stir together the mayonnaise, Dijon mustard, chives, and lemon juice, then fold in the chopped eggs.
  4. Season and serve. Season with salt and pepper to taste. Serve right away on bread, or chill for 20 minutes if you prefer it cold.

Notes

  • Eggs that are a week or so old peel far more easily than very fresh eggs — if you have the choice, don’t reach for the newest carton.
  • Don’t skip the ice bath. It stops the cooking instantly and is the single biggest factor in both bright yolks and easy peeling.
  • A finely diced celery stalk or a tablespoon of minced red onion is a common addition if you want more crunch and sharpness.
  • Swap in plain Greek yogurt for half the mayonnaise for a lighter, tangier version with less fat.
  • Keeps 3–4 days tightly covered in the fridge. The texture is best in the first day or two.
  • Serve on bread, in a lettuce cup, or scooped straight up with crackers.
