The Daiquiri gets overshadowed by its own frozen, blended, fruit-flavored descendants, which is a shame, because the original is one of the tightest three-ingredient cocktails there is: white rum, fresh lime juice, and simple syrup, shaken hard with ice and strained up into a chilled glass. No blender, no fruit puree, nothing to hide behind.

It’s also the template. Swap the rum for whiskey and you get a Whiskey Sour; swap it for tequila and orange liqueur and you’re most of the way to a Margarita. Every one of those drinks runs on the same spirit-sour-sweet logic the Daiquiri perfected first, which makes it the best place to actually learn the ratio.

What You’re Learning

The sour ratio is the whole recipe. Two parts spirit, one part citrus, three-quarters part sweetener is the classic proportion behind the Daiquiri, the Whiskey Sour, and the Margarita alike. Once it’s in your hands, you can build any of them, or invent your own, just by changing the spirit. Taste as you go: a little more syrup softens a too-sharp lime, a little more lime sharpens a too-sweet pour.

Shake hard, then double-strain. Unlike a stirred drink such as a Manhattan or Old Fashioned, a Daiquiri has citrus in it, which needs the aeration and rapid dilution a hard shake provides — about 12 to 15 seconds, until the shaker is frost-cold. That same shake also flakes tiny ice shards into the drink, so it gets double-strained (a hawthorne strainer plus a fine mesh strainer) into the glass, leaving the Daiquiri perfectly clear.

Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 3/4 oz simple syrup
  • Ice, for shaking
  • 1 lime wheel or twist, for garnish

Method

  1. Chill the glass. Fill a coupe glass with ice water and set it aside while you build the drink.
  2. Combine. Add the white rum, fresh lime juice, and simple syrup to a cocktail shaker filled with ice.
  3. Shake hard. Shake vigorously for 12 to 15 seconds, until the outside of the shaker is very cold to the touch.
  4. Double-strain and garnish. Dump the ice water out of the chilled glass. Strain the cocktail through both the shaker’s built-in strainer and a fine mesh strainer into the glass, then garnish with a lime wheel or twist.

Notes

  • Fresh lime juice is non-negotiable. Bottled lime juice tastes flat and one-dimensional next to fresh — this is the single biggest difference between a good Daiquiri and a forgettable one.
  • White rum, not gold or dark. A light, dry white rum keeps the drink clean and lets the lime and syrup lead. Gold or aged rum will work, but pulls the drink toward something closer to a Rum Sour, with more caramel and oak in the background.
  • Double-straining catches the ice chips a hard shake knocks loose, so the drink pours smooth and clear instead of slushy.
  • The Hemingway Daiquiri adds grapefruit juice and maraschino liqueur and skips the simple syrup — a real variation, not a modern invention, and worth trying once you’ve got the original down.
  • Adjust to taste. Prefer it tarter, add a touch less syrup. Prefer it rounder, add a touch more. The 2:1:0.75 ratio is the starting point, not a law.
